I think you have to talk to Pumkin on his own first, and then he'll appear in your room options.

is it just me, or does everytime a character speak in a room I imagine it in that characters voice?

AI isn't being added to Scratch anytime soon. If you want to, you could also read this related essay, which was not made by me.
